Description
A comforting homemade pasta dish featuring tender steak and cheese tortellini in a creamy, garlicky sauce.
Ingredients
Scale
- 20 oz cheese tortellini
- 1 lb steak (sirloin or ribeye)
- Salt
- Black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Prepare the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the cooking water.
- Sear the Steak: While the tortellini cooks, season the steak generously with salt, black pepper, garlic powder, and smoked paprika. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove the steak from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
- Make the Creamhouse Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the minced garlic, cooking just until fragrant (about 1 minute).
- Add Cream and Milk: Slowly pour in the heavy cream and whole milk, stirring constantly. Allow the mixture to simmer for a couple of minutes until it’s heated through.
- Incorporate the Cheese: Gradually whisk in the shredded parmesan until melted and smooth. If the sauce is too thick, add a splash of the reserved tortellini cooking water to reach your desired consistency.
- Combine Everything: Add the cooked tortellini and sliced steak to the creamy sauce, gently tossing to combine. Cook for another 2-3 minutes until heated through.
- Garnish and Serve: Taste and adjust seasoning as needed. Serve immediately, garnished with chopped parsley, red pepper flakes for a kick, and a sprinkle of cracked black pepper for an extra touch of flavor.
