- 2 boneless, skinless chicken breasts
- 1 cup cottage cheese
- 1 cup marinara sauce (store-bought or homemade)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Fresh basil for garnish (optional)
Instructions
- Prep your ingredients: Season your chicken breasts with salt, pepper, and Italian seasoning. Set aside while you preheat your oven to 375°F (190°C).
- Sear the chicken: In a large oven-safe skillet, heat a tablespoon of olive oil over medium heat. Once hot, add the seasoned chicken breasts and cook for about 5 minutes on each side until golden brown.
- Spread the cottage cheese: Once the chicken is done, lower the heat and spread the cottage cheese evenly over the top.
- Add marinara: Pour the marinara sauce over the chicken and cottage cheese, allowing it to seep into all the nooks and crannies.
- Top it off: Sprinkle the mozzarella and Parmesan cheese generously over the top.
- Bake to perfection: Transfer the skillet to the preheated oven and bake for about 20 minutes, or until the cheese is bubbling and golden.
- Serve & enjoy: Carefully take it out of the oven and let it cool for a few moments. Garnish with fresh basil before serving.
Notes
For a make-ahead option, prepare the chicken and cottage cheese layer in advance and store it in the fridge until ready to bake. Leftovers can be stored for up to 3 days.
