Description

Delightful bite-sized cornbread poppers, perfect for cozy gatherings or family dinners.


Ingredients

Scale
  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 tbsp honey
  • 1 egg
  • 1/2 cup corn kernels
  • For Honey Butter Glaze:
  • 1/4 cup melted butter
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 375°F and grease a mini muffin tin.
  2. In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, melted butter, honey, and egg.
  4. Pour the wet ingredients into the dry ingredients and gently fold in the corn kernels.
  5. Fill the muffin cups about 3/4 full with the batter.
  6. Bake for 12–15 minutes or until golden brown and a toothpick comes out clean.
  7. Prepare the honey butter glaze by mixing melted butter and honey, then brush it over each popper.

Notes

These poppers can be customized with cheese, jalapeños, fresh herbs, or berries. Can be made ahead or frozen.
