- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon cinnamon
- 1/2 cup brown sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- Mix the melted butter with the mashed bananas until creamy.
- Stir in the baking soda and pinch of salt.
- Mix in the sugar, beaten egg, and vanilla extract until smooth.
- Fold in the flour until just combined.
- Combine the cinnamon and brown sugar in a separate bowl.
- Layer half the batter into the greased loaf pan, sprinkle with half the cinnamon sugar, then add the remaining batter on top.
- Swirl the batter gently with a knife and add the remaining cinnamon sugar on top.
- Bake for 60-65 minutes, or until a toothpick comes out clean.
- Let it cool in the pan for a few minutes before slicing.
Notes
This banana bread can be made ahead of time and stored in the fridge for 2 days or frozen for up to a month. Use a serrated knife for even slices.
