Description

Quick and easy steak bowls with zesty lime, fresh cilantro, and customizable toppings, perfect for weeknight dinners.


Ingredients

  • 12 oz steak (your choice of cut)
  • 2 cups cooked rice
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn (canned or frozen)
  • 1 avocado, sliced
  • 1/2 cup sour cream or yogurt
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, garlic powder, salt, and pepper. Add the steak and let it marinate for at least 15 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the steak for 4-5 minutes on each side or until desired doneness.
  3. Let the steak rest for a few minutes before slicing.
  4. In a separate bowl, combine the cooked rice with chopped cilantro and a touch of lime juice.
  5. In individual bowls, layer cilantro lime rice, black beans, corn, sliced avocado, and sliced steak.
  6. Mix sour cream or yogurt with lime juice and cilantro, drizzle over each bowl, and serve immediately.

Notes

Marinate the steak ahead of time. Store leftovers in airtight containers for up to three days.
