Description

Ingredients

  • Flank or skirt steak
  • Fresh cilantro
  • Lime juice (freshly squeezed)
  • Rice (white or brown)
  • Black beans (canned or cooked)
  • Corn (canned or fresh)
  • Avocado
  • Creamy cilantro lime sauce (store-bought or homemade)

Instructions

  1. In a mixing bowl, marinate the steak in lime juice and chopped cilantro for at least 30 minutes.
  2. Cook your rice according to package instructions, stirring in lime juice and chopped cilantro once fluffy.
  3. Heat a grill or skillet on medium-high heat, cook the marinated steak to preferred doneness, and allow it to rest before slicing.
  4. Layer cilantro lime rice, black beans, corn, and sliced steak in a serving bowl.
  5. Top with diced avocado and drizzle with creamy cilantro lime sauce before serving.
