Description

A cozy no-bake treat combining creamy peanut butter and rich chocolate with crunchy Rice Krispies.


Ingredients

  • 3 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter
  • 1 cup mini marshmallows
  • 1 cup chocolate chips
  • 1/2 tsp vanilla extract (optional)
  • Pinch of sea salt (optional)

Instructions

  1. In a medium saucepan over low heat, melt the butter and marshmallows, stirring consistently until smooth and gooey.
  2. Stir in the creamy peanut butter and the vanilla extract (if using) until fully combined.
  3. In a large bowl, pour in the Rice Krispies and then pour the melted peanut butter mixture over the top. Gently fold until every piece of cereal is coated.
  4. Line a muffin tin with paper liners. Spoon the peanut butter cereal mixture into each cup, pressing down gently.
  5. In a microwave-safe bowl, melt the chocolate chips in 20-second intervals until smooth. Spoon the melted chocolate over each cup.
  6. Allow to cool at room temperature for 20 minutes or refrigerate to set faster. Carefully peel off the paper liners before serving.

Notes

Make ahead and store in an airtight container for up to a week. Feel free to customize with different nuts or chocolates.
