Description

A quick and comforting Chicken Pomodoro dish perfect for busy weeknights, infused with rich flavors of garlic, tomatoes, and herbs.


Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes or 2 cups fresh tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Grated parmesan cheese (optional)

Instructions

  1. Heat the olive oil in a skillet over medium heat until it glistens warmly.
  2. Add the minced garlic, letting it sauté until fragrant.
  3. Carefully add the chicken breasts; cook until golden brown, about 4-5 minutes per side.
  4. Introduce the chopped tomatoes and sprinkle with oregano and thyme, stirring to combine.
  5. Reduce the heat to low and simmer until the chicken is cooked through, approximately 15 minutes.
  6. Season with salt and pepper, adjusting to taste.
  7. Serve hot, garnished with fresh basil leaves and parmesan cheese, if desired.

Notes

For a creamy version, add heavy cream or cream cheese at the end. Leftovers can be stored in an airtight container for up to three days.
