Description

A comforting one-pan dish bursting with flavors, perfect for busy weeknights and family dinners.


Ingredients

  • 1 pound lean ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 2 cups ready rice (like instant rice)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional toppings: sour cream, diced tomatoes, green onions

Instructions

  1. In a large skillet over medium heat, cook the ground beef until it’s nicely browned. Drain any excess fat.
  2. Stir in the taco seasoning and let those flavors meld for an additional minute.
  3. Add the black beans, corn, and ready rice into the skillet. Mix well until all ingredients are combined.
  4. Pour in 1 cup of water, bring to a gentle boil, then reduce heat to low. Cover and let simmer for about 5 minutes.
  5. Remove from heat and sprinkle cheese on top. Cover again for a couple of minutes until cheese melts.
  6. Serve hot with optional toppings like sour cream, diced tomatoes, and green onions.

Notes

Prepare the beef and bean mixture a day in advance for easier serving. Can be frozen for up to three months.
