Ingredients

- 1 pound lean ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn (canned or frozen)
- 2 cups ready rice (like instant rice)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- Salt and pepper to taste
- Optional toppings: sour cream, diced tomatoes, green onions
Instructions
- In a large skillet over medium heat, cook the ground beef until it’s nicely browned. Drain any excess fat.
- Stir in the taco seasoning and let those flavors meld for an additional minute.
- Add the black beans, corn, and ready rice into the skillet. Mix well until all ingredients are combined.
- Pour in 1 cup of water, bring to a gentle boil, then reduce heat to low. Cover and let simmer for about 5 minutes.
- Remove from heat and sprinkle cheese on top. Cover again for a couple of minutes until cheese melts.
- Serve hot with optional toppings like sour cream, diced tomatoes, and green onions.
Notes
Prepare the beef and bean mixture a day in advance for easier serving. Can be frozen for up to three months.
