Description

A cozy golden cake filled with warm, spiced aromas reminiscent of chai tea, perfect for chilly days.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened to room temperature
  • 4 eggs
  • 1 cup milk
  • ½ cup chai tea concentrate (or brewed chai tea)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • Vanilla extract (optional for added flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until it’s light and fluffy, about 3-4 minutes.
  3. Add the eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl for even mixing.
  4. Pour in the milk and your chai tea concentrate, and stir until combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and spices (cinnamon, cardamom, ginger, and cloves).
  6. Gradually add the dry mixture to your wet ingredients, mixing until just incorporated. Be careful not to overmix.
  7. Pour the batter evenly into the prepared cake pans and smooth the top with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. Frost as desired with cream cheese frosting or a light dusting of powdered sugar, and enjoy!

Notes

For variations, try adding pumpkin puree, nuts, or chocolate drizzle as toppings.
