Description

A cozy and flavorful dinner featuring Cajun shrimp and salmon in a creamy garlic sauce, served with creamy mashed potatoes and sautéed green beans.


Ingredients

  • 4 large shrimp, peeled and deveined
  • 2 salmon fillets (6 oz each), skin on or off depending on preference
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter (1 for seafood, 1 for sauce)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 4 medium russet potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons butter (for green beans)
  • 2 cloves garlic, minced (for green beans)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Start by peeling and cutting the russet potatoes into even chunks. Place them in a large pot of salted water and bring to a boil over high heat.
  2. Let the potatoes cook for 15-20 minutes until tender.
  3. Once fork-tender, drain the potatoes and return them to the pot. Mash the potatoes until smooth.
  4. Add butter and milk while mashing until creamy. Season with salt and pepper, then cover and set aside.
  5. Pat the shrimp and salmon fillets dry with paper towels and season with Cajun seasoning.
  6. Heat olive oil in a large skillet over medium-high heat, and cook shrimp for 2-3 minutes on each side. Remove and set aside.
  7. Add butter to the skillet, and cook salmon fillets for 4-5 minutes on each side until cooked through.
  8. In the same skillet, melt 1 tablespoon of butter and sauté minced garlic for 1-2 minutes.
  9. Mix in heavy cream, chicken broth, Dijon mustard, salt, black pepper, and smoked paprika. Let simmer for 4-5 minutes.
  10. Return the shrimp and salmon to the skillet, spoon sauce over, and let simmer for an additional 2-3 minutes.
  11. Meanwhile, boil salted water and cook green beans for 3-4 minutes until tender-crisp. Drain.
  12. Sauté minced garlic and optional red pepper flakes in a separate skillet, then toss in green beans for 3-4 minutes.
  13. Plate a portion of mashed potatoes, top with seafood, and spoon garlic cream sauce over. Serve with green beans.

Notes

Make the dish ahead by prepping the mashed potatoes and seafood, and store them in the fridge until ready to heat and serve.
