Description

A comforting one-pot meal featuring tender chicken, bowtie pasta, and vibrant broccoli in a creamy, zesty sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 1/2 cup grated Parmesan cheese (plus extra for topping)
  • 1/2 cup reserved pasta water

Instructions

  1. Prepare a large pot of salted water to boil. Once boiling, add the bowtie pasta and cook until al dente. About 2 minutes before the pasta is done, add the broccoli florets. Drain and set aside, saving about 1/2 cup of pasta water.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken pieces and add to the skillet, cooking until golden and cooked through, about 5-6 minutes. Remove and set aside.
  3. Reduce heat to low in the same skillet and add 6 tablespoons of unsalted butter. Allow to melt, then stir in Dijon mustard, lemon juice, and zest. Add red pepper flakes if desired.
  4. Return the cooked chicken to the skillet with drained pasta and broccoli. Mix, adding reserved pasta water until desired consistency is reached. Stir in grated Parmesan, parsley, and chives before serving.
  5. Plate the dish and sprinkle with extra Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Make-ahead options available by prepping chicken and chopping vegetables beforehand.
