Description

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • ½ tsp chili flakes (optional for spice)
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, whisk together the brown sugar, soy sauce, garlic, ginger, olive oil, chili flakes, lime juice, salt, and pepper. Add the chicken and marinate.
  2. Choose your cooking method: Grill for 6-8 minutes on each side, bake at 375°F for 30 minutes, or slow cook on low for 4-5 hours.
  3. Garnish with fresh cilantro before serving. Enjoy with rice or grilled veggies.

Notes
