Ingredients

- 1 cup pineapple chunks (fresh or canned in juice)
- ½ cup brown sugar
- ¼ cup soy sauce
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp olive oil
- ½ tsp chili flakes (optional for spice)
- 2 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, whisk together the brown sugar, soy sauce, garlic, ginger, olive oil, chili flakes, lime juice, salt, and pepper. Add the chicken and marinate.
- Choose your cooking method: Grill for 6-8 minutes on each side, bake at 375°F for 30 minutes, or slow cook on low for 4-5 hours.
- Garnish with fresh cilantro before serving. Enjoy with rice or grilled veggies.
Notes
