- 1 cup vegetable or chicken broth
- 1 cup milk or cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil

- Optional: cooked chicken or protein of choice
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant, about 3-5 minutes.
- Add the broccoli florets and broth to the pot. Bring to a boil, then reduce heat and let simmer until broccoli is tender, about 10 minutes.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth, leaving some broccoli pieces intact if desired.
- Stir in the milk or cream and shredded cheddar cheese, allowing the cheese to melt and blend into the soup.
- Season with salt and pepper to taste, and add cooked protein if desired to create a heartier meal.
- Serve hot, garnished with extra cheese or cracked pepper if desired.
Notes
