Description

A creamy and comforting Broccoli Cheddar Soup that’s quick to make and packed with flavor. Perfect for cozy evenings and family meals.


Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup vegetable or chicken broth
  • 1 cup milk or cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: cooked chicken or protein of choice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant, about 3-5 minutes.
  2. Add the broccoli florets and broth to the pot. Bring to a boil, then reduce heat and let simmer until broccoli is tender, about 10 minutes.
  3. Remove the pot from heat and use an immersion blender to puree the soup until smooth, leaving some broccoli pieces intact if desired.
  4. Stir in the milk or cream and shredded cheddar cheese, allowing the cheese to melt and blend into the soup.
  5. Season with salt and pepper to taste, and add cooked protein if desired to create a heartier meal.
  6. Serve hot, garnished with extra cheese or cracked pepper if desired.

Notes
