Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each, and stir in vanilla extract.
  4. In a separate bowl, combine flour, baking powder, and salt, then gradually mix into the butter mixture until just combined.
  5. Drop spoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart, and bake for 10-12 minutes until lightly golden.
  6. While cooling, whip heavy cream with powdered sugar until stiff peaks form.
  7. Pipe or spoon whipped cream onto half of the cookies and sandwich with the remaining cookies.
  8. Melt semi-sweet chocolate chips and vegetable oil until smooth, then dip the tops of the cookie sandwiches into the glaze.
