- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 2 tablespoons powdered sugar
- 1 cup semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each, and stir in vanilla extract.
- In a separate bowl, combine flour, baking powder, and salt, then gradually mix into the butter mixture until just combined.
- Drop spoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart, and bake for 10-12 minutes until lightly golden.
- While cooling, whip heavy cream with powdered sugar until stiff peaks form.
- Pipe or spoon whipped cream onto half of the cookies and sandwich with the remaining cookies.
- Melt semi-sweet chocolate chips and vegetable oil until smooth, then dip the tops of the cookie sandwiches into the glaze.
