Description

These Blueberry Oatmeal Breakfast Bars are a comforting and healthy breakfast option, perfect for meal prep and customizable to suit any taste preference.


Ingredients

  • 2 cups rolled oats
  • 1 cup fresh or frozen blueberries
  • 1/2 cup creamy almond butter (or any nut/seed butter of your choice)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup milk of choice (dairy or non-dairy)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. Combine the rolled oats, cinnamon, and salt in a large bowl. Mix well to thoroughly distribute the dry ingredients.
  3. Whisk together the creamy almond butter, honey (or maple syrup), milk, and vanilla extract in a separate bowl until smooth and creamy.
  4. Pour the wet ingredients into the bowl of dry oats and stir until well combined. Gently fold in the blueberries, ensuring they are evenly distributed without smashing them.
  5. Pour the mixture into the prepared baking dish. Spread it out evenly with a spatula and press it down firmly to create a compact layer.
  6. Bake in the preheated oven for about 25-30 minutes, or until the edges start to turn golden brown and it’s set in the center.
  7. Allow the bars to cool in the baking dish for 10 minutes, then use the parchment overhang to lift them out and cool completely on a wire rack. Once cool, slice them into bars or squares.

Notes

These bars can be made ahead and stored in the fridge for up to a week or frozen for up to three months. Use a sharp knife dipped in warm water for clean cuts.
