- 1 cup fresh or frozen blueberries
- 1/2 cup creamy almond butter (or any nut/seed butter of your choice)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup milk of choice (dairy or non-dairy)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
- Combine the rolled oats, cinnamon, and salt in a large bowl. Mix well to thoroughly distribute the dry ingredients.
- Whisk together the creamy almond butter, honey (or maple syrup), milk, and vanilla extract in a separate bowl until smooth and creamy.
- Pour the wet ingredients into the bowl of dry oats and stir until well combined. Gently fold in the blueberries, ensuring they are evenly distributed without smashing them.
- Pour the mixture into the prepared baking dish. Spread it out evenly with a spatula and press it down firmly to create a compact layer.
- Bake in the preheated oven for about 25-30 minutes, or until the edges start to turn golden brown and it’s set in the center.
- Allow the bars to cool in the baking dish for 10 minutes, then use the parchment overhang to lift them out and cool completely on a wire rack. Once cool, slice them into bars or squares.
Notes
These bars can be made ahead and stored in the fridge for up to a week or frozen for up to three months. Use a sharp knife dipped in warm water for clean cuts.
