Description

A comforting weeknight dinner featuring tender chicken breasts topped with a vibrant blueberry sauce and fresh thyme.


Ingredients

  • 4 chicken breasts
  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine blueberries, thyme, olive oil, honey, lemon juice, salt, and pepper. Mix until blueberries are coated.
  3. Place chicken breasts in a baking dish and pour blueberry mixture over them.
  4. Bake for 25-30 minutes, or until the chicken is cooked through.
  5. Serve hot, garnished with additional thyme if desired.

Notes
