- 4 chicken breasts
- 1 cup fresh blueberries
- 2 tablespoons fresh thyme leaves
- 2 tablespoons olive oil
- 2 tablespoons honey
- Salt and pepper to taste
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine blueberries, thyme, olive oil, honey, lemon juice, salt, and pepper. Mix until blueberries are coated.
- Place chicken breasts in a baking dish and pour blueberry mixture over them.
- Bake for 25-30 minutes, or until the chicken is cooked through.
- Serve hot, garnished with additional thyme if desired.
Notes
You can prepare the blueberry mixture a day in advance for extra flavor. Leftovers can be stored in the refrigerator for up to 3 days.
