A quick and flavorful Beef Stir Fry with colorful mixed vegetables, perfect for busy weeknight dinners.
Ingredients

- 1 lb beef (sliced thinly)
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 2 garlic cloves (minced)
- 1 teaspoon ginger (grated)
- Salt and pepper to taste
- Cooked rice (for serving)
Instructions
- In a bowl, marinate the sliced beef with soy sauce, oyster sauce, and cornstarch for about 15 minutes.
- Heat a large pan or wok over medium-high heat and add vegetable oil.
- Add the marinated beef to the pan and stir-fry until browned.
- Remove from the pan and set aside.
- Add minced garlic and grated ginger to the same pan; stir-fry for about 30 seconds until fragrant.
- Toss in the mixed vegetables and stir-fry until they’re tender-crisp.
- Return the beef to the pan, season with salt and pepper, and stir-fry together until heated through.
- Serve the stir fry over a generous scoop of cooked rice.
Notes
Feel free to swap the vegetables with whatever you have on hand. Make-ahead options available for marinating.
