Description

Deliciously moist muffins that combine the classic flavors of banana and s’mores, perfect for cozy mornings.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup mini marshmallows
  • 1/2 cup chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the mashed bananas, brown sugar, and granulated sugar until well blended and creamy.
  3. Add the vegetable oil, eggs, and vanilla extract, stirring until smooth and unified.
  4. Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in mini marshmallows and chocolate chips, ensuring they are evenly distributed.
  7. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
