Description

These delightful Bakery Style Mixed Berry Muffins are warm, tender, and bursting with juicy berries. Perfect for cozy breakfasts and made with frozen mixed berries.


Ingredients

  • ½ cup unsalted butter (melted & cooled)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup buttermilk or milk
  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups frozen mixed berries
  • Sparkling sugar (optional)

Instructions

  1. Preheat the oven to 425°F. Put paper liners in a cupcake tin.
  2. Combine the melted butter, sugar, and vanilla in a large bowl until blended.
  3. Add the eggs and mix until combined. Pour in the milk and stir until fully incorporated.
  4. Whisk together the dry ingredients: flour, baking powder, baking soda, and salt in a smaller bowl.
  5. Slowly add half of the flour mixture into the wet ingredients and fold in gently.
  6. Stir until combined. Add the remaining flour and continue folding until absorbed; do not overmix.
  7. Fold in the frozen berries gently.
  8. Fill each muffin cup with about 6 tablespoons of batter.
  9. Sprinkle sparkling sugar over the tops if desired.
  10. Bake for 5 minutes at 425°F, then reduce to 375°F for 20-25 minutes until a toothpick comes out clean.
  11. Remove from the oven and let rest for 10 minutes before cooling on a wire rack.

Notes

These muffins are freezer-friendly for up to 3 months. You can also prepare the batter the night before and refrigerate it.
