Description

Ingredients

  • 1 cup corn (fresh or canned)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small tortillas
  • Cooking spray or oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mash the black beans with a fork.
  3. Stir in the corn, bell pepper, onion, garlic, lime juice, cumin, chili powder, salt, and pepper until well combined.
  4. Place a small amount of the bean mixture onto each tortilla, roll tightly, and place seam side down on a baking sheet.
  5. Lightly spray or brush the tops with cooking oil.
  6. Bake for 20-25 minutes until golden brown and crispy.
