Description

A quick and refreshing salad made with baby spinach, juicy blueberries, creamy avocado, and a homemade balsamic vinaigrette.


Ingredients

  • 4 cups baby spinach
  • 2 cups fresh blueberries
  • 1 cup raw walnuts
  • 1 medium-large avocado (cut into chunks)
  • 1/2 cup goat cheese (crumbled)
  • 1/4 cup fresh mint (torn into small pieces)
  • Salt + pepper, to taste
  • 1/4 cup olive oil
  • 2 Tbsp balsamic vinegar
  • 1/2 a lemon, juice only
  • 1 tsp garlic powder (or 2 cloves fresh garlic, minced)
  • 1 tsp honey

Instructions

  1. Prepare the balsamic vinaigrette by combining olive oil, balsamic vinegar, lemon juice, garlic powder (or minced garlic), honey, salt, and pepper in a small bowl or jar. Whisk or shake vigorously until creamy and smooth.
  2. In a large serving bowl, add the baby spinach, fresh blueberries, walnuts, avocado chunks, goat cheese, and torn mint leaves.
  3. Drizzle the homemade dressing over the salad mixture.
  4. Toss gently until the salad is evenly coated with the dressing.
  5. Serve immediately and enjoy your refreshing delight!
